Cucumber Gin Cooler

I am totally holding onto every last minute of summer. The days are starting to get shorter and the nights a bit cooler but I am not ready to accept that Fall is right around the corner. So, in an effort to extend my summer, I will be relaxing outside sipping on one of these cucumber gin coolers this weekend. The combination of fresh cucumber and lemon juice make for such a refreshing cocktail that just tastes like summer.

You have to use fresh cucumber and lemon juice to make this delicious drink. If you don’t have a juicer but do have a blender, you can make cucumber juice so easily. Chop the cucumbers in small pieces and add them to your blender. You might need a little water to get it started but you should be able to blend it up to the consistency of a thick, pulpy juice. Then strain the juice through a mesh strainer… I won’t lie, this takes a bit of patience to let the juice strain through but it is totally worth it to have fresh cucumber juice! Then add the cucumber juice with the gin, lemon juice and a little bit of agave for sweetness to a shaker with ice. Shake it all up and strain into a glass. Top it off with sparkling water which adds that lovely effervescence and keeps the cocktail light and maybe a little too easy to sip! I love a good garnish on my cocktails and added a slice of cucumber and a sprig of mint here. You can smell the mint along with the cucumber as you sip, (it's a whole experience!) that can help you feel like summer might just last a little bit longer! :)

Ingredients

  • 1/2 cup gin
  • 1/2 cup fresh cucumber juice
  • 1/4 cup fresh lemon juice
  • 1 tablespoon agave
  • sparkling water
  • ice

Instructions

  1. COMBINE: In a shaker, combine gin, cucumber juice, lemon juice and agave. Add a big handful of ice and shake it all up.
  2. SERVE: Strain the gin cucumber mixture into glass over ice. Top with a little sparkling water and serve with a slice of cucumber and sprig of mint, if desired. Enjoy (responsibly)!
