Herby Farro Salad

The weather is warming up and life is starting to feel like maybe we will be back to normal in the near future. Hopefully summer gatherings with friends and family will be a thing this year (all fingers crossed!). Therefore, you may find yourself looking for a quick and easy–minimal cooking required–dish to bring to a cookout and I’ve got you covered. This simple herby farro salad comes together quickly but does not skimp on flavor. The only cooking required is the farro and for that I recommend Trader Joe’s 10-minute farro which cooks up in a few minutes to that perfect chewy consistency (which is what I love about this grain). 

To give this salad so much flavor, I chopped a lot of herbs. One of the wonderful things about this salad is you can easily swap them for your favorite herbs or use what you have on hand. I went for lots of cilantro (which is one of my favorite flavors), scallions, basil and dill. These herbs pack so much fresh flavor and pair really nicely with the bright lemony dressing. Because I love when dishes have a combination of flavors AND textures, I also added creamy avocado and crunchy roasted salted almonds.

I will eat this salad out of a big bowl with a spoon but you can also top it with your favorite protein or serve it as a side dish. The farro continues to soak up all the lemony dressing  as it sits so this is a wonderful option for meal prepping to keep in your fridge and eat during the week. If you want to make a big batch to last you a few days, you could also skip the avocado (to keep it from turning brown) and add it as you enjoy the salad.

Herby Farro Salad

Herby Farro Salad

Ingredients

  • juice of 1 lemon (about 1/4 cup)
  • 1 large clove of garlic, grated or minced
  • 3 tablespoons good olive oil
  • 1/2 teaspoon salt
  • 1 teaspoon agave (or honey)
  • 3 cups cooked farro
  • 4 scallions, thinly sliced
  • 1/2 cup cilantro, finely chopped and loosely packed
  • 1/4 cup basil, finely chopped and loosely packed 
  • 3 tablespoon dill, chopped
  • 1 avocado, cut into cubes
  • 1/4 cup roasted salted almonds

Instructions

  1. MIX: Start by making the dressing. Combine the lemon juice, garlic, olive oil, salt and agave in a small bowl or measuring cup. Mix well and set aside. 
  2. COMBINE: In a large mixing bowl, add the cooked farro and all the chopped herbs. Pour in the dressing and mix well so all the herbs are evenly distributed and everything is coated with dressing. Add half the avocado and half the chopped almonds and mix into the salad. Top with remaining avocado and almonds and enjoy!
